They say that making a great pizza starts with the crust.  Now, I have to disagree slightly – because I think that the foundation of a truly good pizza lies in the sauce.  But for hypothetical purposes just go with me here…

When Passariello’s called Superior Scaffold and asked if they could build a strong foundation out of the back of their restaurant for their renovation project we gladly accepted.  You see, the guys at Passariello’s Pizzeria – Italian Eatery had designs to renovate their bathrooms and their kitchen but had to remain open for business while doing it.  And just like on a pizza – they needed a strong platform to put their equipment (toppings) onto.  So we came up with a design that was exactly as they wanted it.

So how did they accomplish these renovatons?  Well, by breaking them into 2 phases.

Phase 1 – Bathroom Renovation – Build a platform out of the back of the restaurant where customers could walk to a very fancy portable restroom.

Passariello’s cleared out a section out of the back of their structure towards the parking lot.

Then Superior came in and used system scaffold with shoring heads and aluminum beams to construct the 16’ X 50’ platform that utilized the double doors out of the back of the restaurant. Then this platform was covered in ¾” fire retardant plywood and then topped with carpet. Like any scaffold job the biggest challenge was to get to the platform level on the uneven ground.

You can see the trailer that housed the very opulent rest rooms that was parked right next to the platform. Then the entire structure was covered with an enclosure to keep the elements at bay. The design allowed customers to exit the building through the double doors and safely walk on the very sturdy platform to the bathrooms while the ones inside were receiving a makeover.

Phase 2 – Kitchen Renovation.  Now, building a platform for customers to walk on to get to the rest rooms is one thing but moving the entire WORKING kitchen out back – is another.

Once the bathrooms were finished, Superior crews dismantled the platform and moved the entire operation over to utilize the double doors and make more room for the larger kitchen area. Using the same type design incorporating system scaffold, shoring heads, aluminum beams, and plywood they built another platform that would hold the kitchen and a Quonset hut type structure. This renovation was going to take much longer than the bathrooms so the entire platform needed a more permanent cover.

Needless to say that the building of the crust (foundation / platform) went off without a hitch and the sauce (the kitchen) was added to the customer’s satisfaction. All in all, Superior built a pretty good pizza platform for Passariello’s. I’ll add some pics of the kitchen on the platform when I get them.

Pasquale Passariello’s idea was to combine several different food offerings, like in a food court, into a single restaurant concept. Thus the Passariello’s Pavilion idea was born! The Pavilion concept would provide a large variety of authentic Italian upscale pizzas, entrées, salads, sandwiches, and dessert options in a quick-service, casual dining format.
